Although it's technically a fruit (a berry, to be exact), the aubergine is used as a vegetable. Aubergines are in season from May to October and are at their best in the later summer months.
Aubergines work brilliantly in salads, stews or as part of a mezze platter. They play a central role in French classics like ratatouille or traditional Mediterranean moussakas. A great veggie alternative to meat.
